Makes 12 individual portions
Use this crust-less quiche recipe as a base and experiment with vegetables, tofu, cheeses and meats. Below is a suggestion of ingredients. You also could add precooked turkey bacon or diced deli chicken as an alternative.
1 10-ounce package frozen chopped spinach, thawed and drained
¾ cup shredded or grated cheese (cheddar, Swiss, goat, pepper-jack or a blend)
¾ cup whisked eggs or egg substitute
¼ cup colorful red, orange or green peppers, finely diced
¼ cup mushrooms, finely diced
¼ cup onions, finely diced
Salt and pepper to taste
Heat oven to 350 degrees.⁰
Spray a 12-cup muffin pan with cooking spray.
In a large bowl, combine all of the ingredients.
Mix well and divide evenly among the muffin cups.
Bake for 20 minutes (insert a knife into center — if it’s clean upon removal, the quiches are ready).
Freeze in between wax sheets and reheat in microwave or toaster oven
